The Borratella property is located in Tuscany and is situated in the municipality of Gaiole in Chianti, Siena, in the heart of the Chianti Classico region, surrounded by its 5.75 hectares of Chianti Classico vineyards, 2 hectares of olive groves and 75 hectares of woodland.
At an altitude of 350-380 metres above sea level, the vineyard is predominantly of the Sangiovese grape variety. In recent years the Canaiolo, Colorino and Malvasia Nera grape varieties have also been planted. The property also offers an excellent Extra Virgin Olive Oil that is produced from its olive grove (approximately 200 olive trees).
The farm is family-run, where love for the land merges with a passion for producing high quality products.
A specific feature of the TERRAIN is the fact that it is covered on the surface by rocks of calcareous origin and mixed with clay and silt in its deeper layers.
The rocks provide protection from the sun during hot summers, allowing the soil to breathe.
During the night, the woods surrounding the vineyards cool the grapes and create a film on the grapes to protect them from the heat.
All the vineyards are south-facing (south-west and south-east).
The WINE CELLAR was built in 2000.
It was renovated in 2017 with the introduction of a cooling system to cope with very hot summers and state-of-the-art machinery was purchased.
The fermentation process takes place in temperature-controlled steel tanks and the ageing process in tonneaux and French oak barriques for second and third passages.
